The Tom Collins is an exceptionally light and refreshing classic drink. The lemon and gin are more subtle in this cocktail than in a gimlet, for example. Moreover, it is perfect for the palate that has tired of a gin and tonic, as some find the sweetness of tonic water to be cloying.
Ingredients:
2 tablespoons fresh lemon juice
2 teaspoons superfine or confectioners sugar
2 ounces gin
club soda
a mint sprig or lemon wedge for garnish
Directions:
In a tall glass or a Tom Collins glass, stir in the lemon juice and sugar. Add in gin. Fill glass to the top with ice cubes. Top off with club soda and garnish with mint, a lemon wedge, or lemon rind. Enjoy!
