Cherry Brandy

Cherry Brandy is another classic infused brandy. It is great to mix in brandy drinks, and is wonderful on its own.  This brandy drink is best made with fresh cherries, dark and sweet.  To add a bit of flavor, cherry pits, the kernels of apricots or bitter almonds are added.  This  infused Cherry Brandy simply gets better with age.  Mix a batch with sweet cherries in the summer, and it will  have set perfectly as soon as the days get shorter, the nights longer, and the weather colder.

Cherry Brandy Recipe

1/2 cup sugar
1 lb fresh and ripe morello cherries
1/2 cup juice from fresh cherries
1 bottle (750 ML) brandy

In a clean sterilized glass jar or bottle add sugar, clean and washed cherries, juice and brandy.  If you have a few peach or apricot kernels, or some bitter almonds, add a few to the concoction. Let sit for at least eight weeks in a dark and cool place.  Shake from time to time.  You will not be disappointed.
